Half-shaped Extra Refined Cherry Hide

The Nascondino Extra Affinato in Ciliegie (on this page offered in the half kg format) by Corrado Benedetti is a cheese of pale white or yellow color with reddish infiltrations under the rind, its aroma recalls fruity notes of ripe marasca cherries.

This particular aging process follows a method very similar to its larger-sized version, but the result is completely different. This is due to the starting cheese, which in the extra version is of reduced size. The selected "caciotte" are aged in the premises of Corrado Benedetti in Croce dello Schioppo to develop the range of flavors. The aging process involves prolonged contact of the cheese with a puree obtained from the maceration of cherries. The tradition of hiding cheese under fruit has distant origins and is the reason behind the name of this product. In this version, the Nascondino develops fresh and delicate flavors, in addition to its characteristic reddish coloration.
