This particular aging follows a process very similar to its larger-sized version, but the result is completely different. This is thanks to the base cheese, which in the extra version is of reduced size. This creation aims to enhance local dairy production by expanding its flavor range. The selected cheese forms are immersed in a puree obtained from the maceration of pears. The custom of hiding cheese under fruit has ancient origins and is the source of this product’s name. Once the aging process is complete, the cheese will have developed delicate nuances, conferred by the pears, among which emerges a grassy and pungent vein.
