This is due to the fact that in the extra version, the cheese is of reduced size. This creation aims to enhance the local dairy production by broadening the range of flavors. The selected cheese forms are immersed in a puree obtained from the maceration of pears. The custom of hiding cheese under fruit has ancient origins and is the source of the name of this product. Once the aging process is complete, the cheese will have developed delicate nuances, imparted by the pears, among which a grassy and sharp vein emerges.
