This cheese is made from sheep's milk. Once it reaches at least four months of aging, it is placed in pits dug into the rock. Here it remains for 90 days enclosed in natural fabric bags, during which the cheese matures undergoing fermentations. The aging in the pit gives the cheese a strong taste and an intense aroma, rich in herbaceous and mineral notes.
