The Speck dello Schioppo by Corrado Benedetti is a cured meat with a delicate flavor, featuring toasty notes and a fragrance reminiscent of forest hints with light fruity undertones.
The selected pork legs are skillfully processed by the butchers of Corrado Benedetti. Unlike raw ham, the pig's leg is opened, salted, and flavored.
After an initial phase of cold drying, which preserves the sweet and rosy meat, the speck is carefully smoked according to traditional preservation methods typical of northern countries. It is hung in the air to continue maturing and drying for at least 27 weeks at the Corrado Benedetti reserves, resulting in a sweet and aromatic cured meat.
The Speck dello Schioppo features a beautiful bright pinkcolor, with thin and uneven fat streaks . On tasting, it offers an explosion of forest hints and harmonious smoked flavors, despite the delicate taste of the cured meat.
