The White Fennel that we present comes from sun-exposed crops in Puglia. Sa.Ma. Frutta has selected only the Extra, meaning those with a very large and particularly rounded, compact and well-closed bulb, which can exceed 500 grams.
This type of Mediterranean herbaceous plant has a bulb composed of the set of leaf sheaths, whitish in color, fleshy, tightly pressed against each other. Fennel is the vegetable with the lowest calorie index (only 15 Kcal per 100g), promotes digestion by combating the formation of intestinal gas, is rich in vitamins A and C, sodium, calcium, phosphorus, and especially potassium, which is beneficial for the heart and nervous system.
The Extra White Fennel from Puglia (which we present on this page in a quantity of 1kg) has a distinctive flavor, similar to that of anise and at the same time slightly sweetish. This makes it very enjoyable when consumed raw, in a fresh salad just dressed with a drizzle of extra virgin olive oil and a splash of balsamic vinegar. Steamed, it gives the best of itself, fully preserving its organoleptic properties. It is also widely used for raw antipasti or risottos, as well as many other stews or baked dishes. Its flavor is often used to enhance the taste of foods, but also to cover up their flaws.
