This Trout Bottarga has a more delicate flavor compared to that of grey mullet and also has a very particular and savory taste. The Bottarga is made from the eggs of trout, pressed and salted, a high-quality product from Trota Oro.
The ovarian sac is removed from the trout, thoroughly washed, and then placed in salt for a few days.
These sacs, after the salting process is complete, are washed of the salt and slowly dried to eliminate any remaining liquid. Finally, the product is ready to be ground into powder and packaged in vacuum-sealed glass jars.
For the salting process, a very high-quality salt is used, the sweet salt of Cervia with no added preservatives.
The Trout Bottarga, having a flavor that is not too overpowering, is ideal as a delicious appetizer, or it can be used as a seasoning for pasta along with some lemon juice, creating a tasty and impressive dish.
