Organic Parmigiano Reggiano DOP over 30 months 500g

The Parmigiano Reggiano DOP Organic aged over 30 months from Ferrari BIO is obtained from skimmed milk produced on-site from evening milking mixed with whole milk from morning milking.

The milk used is organic and has the certification Latte Fieno STG (Traditional Specialty Guaranteed), which ensures that it comes from cattle raised on traditional, sustainable dairy farms, and fed exclusively with grass, legumes, grains, and hay, without the use of fermented feeds and the administration of GMO feed. 

Poured into typical bell-shaped copper boilers, the milk is enriched with natural rennet and starter whey that allow it to coagulate. The curd is then broken down by the cheese master into tiny grains using an ancient tool called a spino. 

After this operation, a slow cooking process begins, reaching 55 °C, after which the cheese grains sink to the bottom of the boiler, forming a single mass, which will then be extracted by the cheese maker and processed to obtain cheese forms.

The forms so prepared, after a few days, are immersed in a saturated solution of water and salt that allows for salting by osmosis. The final phase of the production process of Parmigiano Reggiano BIO is the aging process, where the forms are arranged in long rows and left to rest on wooden boards for a minimum of 30 months.

In this way, the outer part of the cheese dries, forming a natural crust, obtained without chemical treatments and fully edible. Finally, the experts of the protection Consortium examine each form of Parmigiano Reggiano, and only after a positive inspection is the fire mark applied to the forms that meet the requirements of the Protected Designation of Origin (DOP).

What you find here is the portion of 500g aged 30-33 months. With this aging, Parmigiano Reggiano presents a intense straw color. The texture is drier and more granular compared to other ageings.

Richer in nutrients, its flavor is pronounced and features notes of dried fruit and spices.
