Organic Parmigiano Reggiano DOP over 30 months 200g

The Organic Parmigiano Reggiano DOP aged over 30 months from Ferrari BIO is obtained from skimmed milk produced in-house from evening milking mixed with whole milk from morning milking.

The milk used is organic and has the Hay Milk STG (Traditional Guaranteed Specialty) certification, which guarantees that it comes from cows raised in traditional, sustainable dairy farms, fed exclusively on grass, legumes, cereals, and hay, without the use of fermented feed and the administration of GMO feed.

Poured into typical bell-shaped copper boilers, the milk is enriched with natural rennet and starter whey that allow for coagulation. The curd is then fragmented by the cheese master into tiny grains using an ancient tool called spino.

After this operation, a slow cooking begins, reaching temperatures of 55 °C, after which the cheese granules settle at the bottom of the boiler forming a single mass, which will then be extracted by the cheese maker and worked to obtain cheese shapes.

The shapes thus prepared, after a few days, are immersed in a saturated solution of water and salt that allows for salting by osmosis. The final phase of the production process of Organic Parmigiano Reggiano is aging, where the forms are arranged in long rows and left to rest on wooden boards for a minimum of 30 months.

In this way, the outer part of the cheese dries, forming a natural rind, thus obtained without chemical treatments and totally edible. Finally, experts from the protection consortium examine each form of Parmigiano Reggiano, and only after a positive verification is the quality mark applied to those forms that meet the requirements of the Protected Designation of Origin (DOP).

What you find here is the portion of 200g aged 30-33 months. With this aging, Parmigiano Reggiano has an intense straw yellow color. The consistency is drier and more granular compared to other aging.

Richer in nutrients, its flavor is pronounced and presents notes of dried fruit and spices.
