Over the years, the Vinappeso of Valpolicella has managed to win over many chefs both locally and internationally, thus allowing the Vigneto dei Salumi to continue experimenting with these chefs on pairings of all kinds. The Vinappesino is born from the heart of the hind leg of the Italian heavy pig, which is then aged for about 28-30 months in the cellar and then refined for 3 to 4 months approximately immersed in Amarone and Recioto della Valpolicella.
After undergoing the magical transformation process of double aging, the Vinappesino is finally cut by hand into small and thin strips and packaged in 100g packages.
