I Dry Chickpeas from the Solco Dritto of Valentano from Agriturismo Il Poggio are historic legumes of Alta Tuscia that can bring medieval traditions back to your plate.
These chickpeas are yellow, smooth, and usually weigh about 300 mg each. They typically grow in hilly, particularly clayey soils and in a mild climate.
These particular conditions give these legumes an excellent flavor, allowing us to cook them in less time compared to other legumes of the same type.
Various historical documents speak of the Chickpea of the Solco Dritto, with some testimonies coming from the Etruscans, who used it extensively as an ingredient in their dishes. From then until today, it has represented a very important product for both the sustenance of farming families and the local economy.
The name derives from an old farming tradition called “tiratura del solco dritto”. This takes place every year on August 14th when a furrow is marked in the plain of Valentano. Depending on how straight it is, predictions for the following year's harvest are made.
The Dry Chickpeas from the Solco Dritto of Valentano from the Agriturismo Il Poggio are excellent for preparing appetizers, first courses (the classic pasta and chickpeas), soups and minestrones, salads, burgers, and meatballs.
In the culinary tradition of Tuscia, chickpeas are mainly eaten during the Christmas holidays, where they are often cooked with other typical products like chestnuts.
