Etymologically, the name of the genus Thymus most likely derives from the Latin “Tymis” or “Thymòsus,” meaning “having scent” or from the Greek Thymòs, “soul”; a second hypothesis traces it back to the Egyptian “tham,” a term referring to a plant used for washing embalmed bodies.
Thyme is a typical species of the Mediterranean scrub, exhibiting a bushy growth habit with small, linear-lanceolate, cottony, and whitish leaves on the underside. The flowers, which are pinkish-white to lilac, are grouped in spikes at the leaf axils. It grows spontaneously in dry, sunny soils from the cliffs to altitudes of 800 meters above sea level.

To produce its Sicilian thyme, Due Palmenti uses the flowering tops of the thyme harvested during the summer. Once collected, the flowering tops are gathered into bunches and subjected to drying in the shade, in warm, dry, and well-ventilated places or in a dryer, so as to preserve the aroma and thereby extend its shelf life.
The Sicilian thyme from Due Palmenti is cultivated according to the principles of a sustainable and environmentally-friendly form of agriculture, through the use of organic fertilizers and the absence of synthetic chemical products.
All phases are carried out by hand, from transplanting to weed removal, up to harvesting, drying, and packaging, thus imparting a strong territorial characteristic to the product itself.
