The Cabernet Franc Selezione Venezia DOC 2017 from the Ai Galli Agricultural Company is tradition and uniqueness. Two words that better tell the value of Cabernet Franc in the Venetian Terroir. A vine that excels when grown in clayey soils rich in Caranto, just like the soils of the vineyards of the Venetian company. A wine that comes from over forty years of tradition and experiences, the result of the strong bond between Man and Terroir.

Training method: Sylvoz.
Winemaking: Manual harvesting during the first decade of October. The maceration in contact with the skins, at a temperature of 28 °C, lasts about 10-12 days in an innovative fermenter called “Ganimede.” The primary characteristic of this fermenter is the ability to accumulate carbon dioxide developed during the fermentation process of the must, which, when appropriately released, will help obtain a homogeneous and optimal mixing of the pomace without the use of mechanical means. Once fermentation is complete, the resulting wine is placed in French oak tonneaux with a capacity of 700 liters where it will age until bottling.

The Cabernet Franc Selezione Venezia DOC 2017 from the Azienda Agricola Ai Galli is a red wine of great elegance and olfactory and gustatory complexity. It pairs wonderfully with noble poultry, game, roasts, and aged cheeses.

Color: Intense red that, with aging, takes on garnet reflections.
Smell: Intense, winey aroma, characteristic for its youthful herbaceous flavor that evolves over time into notes reminiscent of oriental spices and cinnamon.
