Training method: Simple Guyot
Harvest: Second-third decade of October, by hand, after summer thinning
Vinification: De-stemming and crushing of the grapes, fermentation for 15 days in stainless steel tanks with automatic punching down at a controlled temperature of 24-26°C
Aging: 6 months in steel, 18 months in oak barrels of 25 hl, an additional 6 months in bottle
Alcohol content: 13% vol.
Pairings: The best combination is with grilled dishes, perfect also with pasta with meat sauce, cold cuts, and red meats, semi-aged cheeses such as scamorza, pecorino, or Parmigiano Reggiano.
Characteristics: Intense ruby red color. Initial notes of cherry and elegant hints of underbrush, where wild strawberries and blueberries can be easily recognized. Fineness enhanced by final notes of mulberry and laurel. On the palate, it presents considerable elegance. The typical mineral sensations of the territory combine with the unique aromas of fruit and spices from the Vernaccia Nera, a grape variety that expresses its maximum peculiarity in this wine.
Suggestions: Serve in a wide Ballon glass at a temperature of 16-18 °C.
