The Sommo Passito Rosso Marche IGT 2014 by Terre di Serrapetrona is a dessert wine of great depth, the result of careful and meticulous work in the vineyard and winery. The long stay in the “fruttaio,” along with the careful and periodic monitoring of the clusters, makes the drying of the grapes a distinctive phase in the winemaking of this product.

Training System: Simple Guyot
Harvest: Second decade of October, hand-picked, cluster selection, summer thinning
Vinification: Natural drying, fermentation for 15 days in steel tanks at a temperature of 24-26°C
Aging: 36 months in oak wood and 12 months in bottle
Alcohol Content: 14% vol.
Pairings: Great meditation wine, excellent when enjoyed alone. Special when paired with moldy cheeses or chocolate desserts, red fruit tarts, and dry pastries.
Characteristics: Ruby red color with purplish reflections. Aroma that initially evokes elegant notes of fruit and wilted flowers together with hints of plum and maraschino cherry. Followed by spicy notes, with a finish of tobacco and chocolate. Soft and velvety taste, well-balanced, of high elegance and persistence.
Suggestions: Serve in a glass at a temperature of about 16-17°C, taking care to open the bottle an hour before serving the wine.
