The Vernaccianera Vernaccia di Serrapetrona DOCG from Terre di Serrapetrona is the only red sparkling wine with three fermentations, a result of ancient farming traditions. During the winter, wine made from dried grapes is added to the base wine.
Grape variety: 100% Vernaccia Nera
Training: Simple Guyot
Harvest: Second decade of October, by hand, selection of clusters, partly vinified immediately and at least 40% left to natural drying in the fruit room
Vinification: first fermentation for 10-15 days in steel tanks at a temperature of 22° - 24° C, second fermentation in December-January with the dried grapes, third fermentation in spring, preparation of the cuvée for the sparkling process
Alcohol content: 12% vol.
Pairings: Platter of cured meats and cheeses, ideally paired with local products from the Marche region such as ciauscolo, pecorino, and the traditional dry sweets from the area.
Characteristics: Ruby red color with violet reflections, with a persistent red foam. Fruity aroma characteristic of Vernaccia Nera. Lively taste, which beautifully balances the sweet residual.
Suggestions: Serve in tulip glasses, at a temperature of about 6-8 °C
