SPARKLING TECHNIQUE: classic fermentation in the bottle, with long aging, maturation on the lees for about 10 years.
Alcohol content: 12.5% vol
With the long bottle aging of about 10 years, in contact with selected native yeasts, a wine is obtained that seems to find no age limits and reveals a great and always loyal ally over time. A product where the surprising freshness is accompanied by aromas of honey, spices, dried fruit, and a distant memory of chocolate, in a continuous crescendo of harmonies. A wine that is the result of a special and fortunate moment of nature, and of an infinite and patient work of man.
The D'Antan Soldati La Scolca Brut Millesimato 2008 by La Scolca is ideal as an aperitif and for important lunches, very suitable for after lunch and for "meditation".
SERVICE TEMPERATURE: 8 °C.
IMPORTANT NOTES: the sparkling wine reaches the optimal serving temperature after about two hours of staying in the refrigerator. It is advisable not to extend this stay beyond two/three days; a longer period could cause drying of the cork and consequent alteration of the product, with loss of pressure and taste anomalies.
APPEARANCE: thick, soft, and abundant foam; fine and continuous bubbles.
COLOR: light gold, bright and sparkling.
AROMA: intense and persistent; starting with a warm impression, followed by intense notes of exotic fruits, fading into honey and spices, in a complex soft and elegant profile.
TASTE: important, dry, full-bodied, with a firm and fresh backbone; velvety texture and continuous, refined by long aging on the lees; pleasantly acidic, with a pleasant hint of almond.
