The D’Antan Soldati La Scolca Brut Rosè Millesimato 2008 by La Scolca is an intense wine, capable of providing unique sensations, produced using slow and traditional artisanal processing methods.
With a long bottle aging of about 10 years, in contact with selected native yeasts, it results in a wine that seems to have no age limits and discovers a great and always faithful ally over time. A product in which the surprising freshness is accompanied by aromas of honey, spices, dried fruit, and a distant memory of chocolate, in a continuous crescendo of harmonies. A wine that is the result of a particular and happy moment of nature, and of an infinite and patient work of man.
CLASSIFICATION: Quality Sparkling Wine Brut Rosè.
GRAPE VARIETY: Cortese with 3/5 % of Pinot Noir.
PRODUCTION AREA: hilly, in the production area of Gavi D.O.C.G.
CUVÉE: a rosé wine obtained by vinifying white and black grapes with a short skin contact in the must.
SPARKLING TECHNIQUE: classic fermentation in bottle, with long aging, maturation on the lees for about ten years.
Alcohol content: 12.5% vol
The D'Antan Soldati La Scolca Brut Rosè Millesimato 2008 by La Scolca is ideal as an aperitif and for important "full meal" lunches, very suitable for after lunch and for "meditation".
STORAGE TIME: to be consumed within two/three years from bottling (dégorgement).
SERVING TEMPERATURE: 8 °C.
IMPORTANT NOTES: the sparkling wine reaches the optimal serving temperature after about two hours in the fridge. It is recommended not to extend this period beyond two/three days; a longer period may cause desiccation of the cork and subsequent alteration of the product, leading to loss of pressure and taste abnormalities.
APPEARANCE: fine, soft and abundant foam, minute and continuous perlage.
COLOR: light, pale pink.
AROMA: slightly spicy, intense and persistent. Notes of pastry, white chocolate. From a first warm and amber impression, it moves to intense scents of exotic fruits, fading into honey and spices, in a soft and elegant complexity.
TASTE: matches the aroma, important, full, with a decisive and fresh nerve; velvety and continuous texture, refined by the long stay on the lees; pleasantly acidic, with a pleasant hint of almond. The finish is of rare beauty with hints of candied fruit.
