The Classic Provenzale Extra Virgin Olive Oil from Frantoio Le Fascine is a magnificent monocultivar extracted solely from Provenzale olives, which have unique organoleptic characteristics that make them one of the most prized varieties in the world.
Provenzale olives are low-yielding but of great quality: from each hundredweight of these olives, only about 11 liters of EVO oil are extracted on average.
Its aromas evoke artichoke, freshly cut grass, and almond. It has a intense fruitiness, but not overwhelming, round, complete, and pleasing to the palate.
A 100% Apulian masterpiece!
The harvesting of these olives is done directly from the tree: the olives never touch the ground. The milling of the fruit always occurs within 24 hours of harvesting. The oil extraction takes place at a controlled temperature of 24°C.
The Classic Provencal Extra Virgin Olive Oil from Frantoio Le Fascine is a penetrating oil, characterized by pronounced aromas and distinctive bitter and spicy notes. It is ideal for cooking, especially for medium or long cooking dishes, and perfectly suited for dishes where the seasoning is the protagonist.
We see it working very well as a dressing for robust foods such as boiled beef, braised or stewed dishes, grilled red meats, legume soups, vegetable soups, ribollita, tomato bruschetta.
