The Salame Aquilano from Fattoria Valle Magica is a product made with selected cuts of Nero d'Abruzzo pigs and flavored with traditional spices, creating a texture and taste that are very popular in L'Aquila and throughout Abruzzo.
Fattoria Valle Magica aims to give everyone the opportunity to rediscover the flavors of the past through the ethical and sustainable farming of rare and ancient breeds. All this takes place in the Abruzzo mountains, in the Gran Sasso National Park, under the famous Rocca Calascio. The farm is located on the site of the ancient farm of the monastery of the Baronia di Carapelle Calvisio, which has been abandoned for many years.
How is Salame Aquilano made? After the initial aging period, the salami is pressed between two chestnut boards to take on its traditional shape. It is then simply seasoned with salt and pepper to enhance the flavor of the pork.
