The Lombo di Nero d'Abruzzo from the Fattoria Valle Magica is a very tasty cured meat suitable for those who prefer to eat lean cuts. It is made from the loin of the Nero d'Abruzzo pig and its curing process is similar to that of capocollo. The only difference is in the composition. Light pink in color, it has only a white fat rim. The flavor is very pronounced, with a noticeable hint of fennel.
It is also a cured meat that is produced occasionally, therefore it is subject to limited availability.
Fattoria Valle Magica aims to give everyone the opportunity to rediscover the flavors of the past through the ethical and sustainable breeding of rare and ancient breeds. All of this is set in the Abruzzo mountains, in the Gran Sasso National Park, under the famous Rocca Calascio. The farm is located in the site of the ancient farm of the monastery of the Baronia di Carapelle Calvisio, which has been abandoned for many years.
