Let’s start with the milk. The milk used to produce the walnut pecorino cheese comes from the Pecora Bagnolese, also known as Malvizza. The authenticity of the product is precisely tied to these sheep! The reason? Malvizza sheep are allowed to roam freely and feed on what nature offers them along the paths of the Irpinian pastures. 

The Bagnolese pecorino is expertly handcrafted, following strictly traditional methods. The 12-month aging gives the cheese an intense and full-bodied flavor, typically spicy.
