The Irpinia Campi Taurasini DOC 2019 by Cantine Novera is a wine of exceptional quality, made from pure Aglianico grapes.

Production area: Taurasi
Training system: Spur pruning
Altitude: 365 m a.s.l.
Soil composition: Clayey limestone
Harvest period: First decade of November. Manual harvesting.
Winemaking: The hand-picked grapes are meticulously destemmed and pressed. Fermentation and maceration take place in stainless steel tanks for about 15 days to achieve a good extraction of color and aromas, without weighing down the tannic structure, which expresses itself with softness. Aging, depending on the vintage, continues in French oak barriques for about 8-10 months until it is bottled and released for sale.

The Irpinia Campi Taurasini DOC 2019 from Cantine Novera pairs perfectly with a good classic first course or with game, elaborate and spicy meats. It also pairs very well with aged cheeses and cold cuts.
It is recommended to serve it at a temperature of 16-18°C and to let it breathe in a decanter for 1 hour.
A wine with a ruby red color and aromas of spices, licorice, and red fruits. On the palate, it is structured and elegant with fine tannins.
