This is a single variety EVO oil obtained from the cold extraction of Grignano cultivar olives from the Illasi area, in the eastern Verona region. The processing takes place through mechanical processes, that is, without the use of chemical processes or substances, in conditions that do not cause alterations to the oil.
The fruits that Azienda Agricola Luigi Ruffo uses come from the company's owned plots and are harvested in the autumn period only when the olive has specific characteristics and is ready to be picked.
The attention given to the care of the plants and the ten days of harvesting ensures that the quality of the oil produced remains stable over the years and that the organoleptic characteristics do not undergo variations. So much so that Luigi, to determine the perfect harvesting time, usually crosses his century-old olive groves in a small caravan and checks the state of the plants, one by one.
The powerful and balanced taste of Grignano extra virgin olive oil is given, in addition to the Grignano cultivar, by an extremely limestone soil (up to 60-70%) that allows for an oil characterized by very low acidity, a very high level of polyphenols, and strong citrus notes, to the point of resembling an oil from the sunny regions of southern Italy.
The most challenging but rewarding adventure begins in 2006, when Luigi inherits a small olive grove from his father that will become the cornerstone of his agricultural business.
