The grape variety from which the grapes of this typical wine of Oltrepò Pavese come is located in Pavia, in the municipality of Santa Giuletta at 250 meters above sea level, and enjoys the warm afternoon sunlight.
In a predominantly clayey and silt-clay soil, Roberto and Vittorio cultivate their vineyards according to strict and precise standards that only careful organic farming provides. Thus, to obtain a wine of extreme quality, the quantities of grapes are deliberately limited and selected by the experienced eyes of the La Casaia team, which every year spends the last summer days picking one by one the most beautiful bunches that reach maturity on the vines of Colle del Belvedere.
From bunch to bottle, the vinification of the grapes, 90% Croatina and 10% Uva Rara, takes place inside the La Casaia winery, where the slow and careful process that will give life to Bonarda Oltrepò Pavese Armonia DOP BIO begins. The first phase is the crushing with the separation of the berries from the stalk; the must obtained is then fermented in stainless steel or vitrified cement tanks under temperature control. Fermentation lasts about ten days at temperatures close to 28°C, during this phase, punch downs are carried out every 8 hours to increase the extraction of color and aromas. At the end of fermentation, the wine is separated from the skins and stored in tanks for aging.
After this phase of maturation in tank, the wine is refrigerated to -4° C for another 10 days before being filtered and bottled. Finally, the last step involves a further aging in bottle for at least 60 days.
This wine from the tradition of Oltrepò Pavese is characterized by its intense ruby red color with garnet highlights. It has high harmony; on the nose, the aroma is broad and persistent. The most pronounced notes are those of marasca and raspberry. On the palate, the taste is very dry, warm with a velvety tannin expressive of the varietal, of good structure, and with a medium-long persistence.
Traditionally, it is chosen to accompany roasts, boiled meats, and game dishes. Vittorio, being a good eater, suggests trying his Armonia with cured meats, especially those from the Pavia tradition, which are very fatty but tasty, or with cheeses, such as caciotta or quartirolo, as the natural minerality and freshness mixed with the soft and delicate tannins of this wine help cleanse and degrease the palate for the next tasting.
Additionally, as a passionate producer of organic rice, he recommends pairing Bonarda with salsiccia and bonarda risotto or bonarda ravioli, to be eaten strictly in a terracotta dish.
It is advisable to serve it at a temperature of around 14°C.
