The Spumante Metodo Classico 13 Lune BIO comes from a careful selection of Pinot Noir grapes, sourced from the estate vineyards of La Casaia, located in the heart of Oltrepò Pavese, about 250 meters above sea level, with a North/North-West exposure.
The biological essence of this wine is given by the choice to carry out agronomic practices that respect the plants and a careful and meticulous production methodology. These characteristics, combined with the good exposure of the vineyard, allow for the production of a superior quality organic wine.
The grapes, after being harvested, are transported to the company winery where the real processing of the grapes begins. They are initially mechanically pressed to allow the separation of the juice from the skins. Subsequently, before the twenty days of fermentation, the extracted grape juice is allowed to rest in a tank at 12°C for about 28 hours.
The fundamental characteristic of this classic method is the slow refermentation in the bottle followed by maturation in contact with the yeasts, the company motto is to work with CALM, in order to achieve a special bottle! After this initial phase, the base wine is refermented in the bottle in the underground part of the winery at a controlled temperature.
The company La Casaia has as its primary goal the dissemination of the culture of good drinking, but above all of good wine, to be produced with the utmost care and attention. This Spumante Metodo Classico 13 Lune BIO is a fine and pleasant sparkling wine. It has a straw yellow color with slight greenish reflections. On the nose, floral aromas and apricot are accompanied by delicate mineral notes. On the palate, it presents itself as a structured and balanced wine, soft and enveloping: fresh yet soft and full at the same time.

Why is it called 13 Lune?
Because this wine in fact rests for 12 months on the lees, and on the thirteenth moon, it is processed again with the delicate operation of disgorgement, through which the sediment formed inside the barrels is removed. Finally, before sealing the bottle with the classic mushroom cork, the Liquer de Expedition is added, a syrup with a secret recipe, which compensates for the part of liquid lost during racking. However, before toasting with this delightful sparkling wine, you will need to wait another sixty days of aging.
