The Paški Sir DOP is aged for at least 60 days. It has a cylindrical shape, with a flat base and a top surface that can be flat or slightly convex, with a diameter that ranges from 18 to 24 cm, a height between 7 and 13 cm, and a weight between 1.8 and 3.5 kg, depending on the size.

The crust is smooth and hard, varying from golden yellow to pale reddish brown; the inner paste is compact, slightly elastic, easily sliceable, with a dense consistency and very few or no small irregular holes, of pale yellow color.
As the aging progresses, it loses elasticity and darkens in color. The flavor is delicately spicy and sweet, intensifying with aging, while the aroma is characteristic of sheep cheeses, with notes of aromatic herbs.
