Grapes: 70% Sauvignon Blanc, 30% Sémillon
Preserves all the aromatic potential, night harvest, sorting table, light skin maceration, long and gentle inertized pressing, fine decantation followed by fermentation with selected yeasts, in tanks at 16-18°.
Aging: Protected from air, in stainless steel tanks, on the lees for 5 months with stirring.
Pleasure wine to be drunk from 2 to 3 years, as an aperitif, with summer salads, or with classic seafood and goat cheeses.
