It is the medium-aged version of this cheese from the Veronese mountains, produced exclusively with raw cow's milk and has a semi-cooked texture.
It is aged between 6 and 8 months. The rind is thin and elastic. The paste has a color that varies from white to straw yellow, especially in the summer period.
More intense in aromas with a lovely sensation of yellow flowers, fresh milk, and a nice balance on the palate.

Ideal cheese for aperitifs and typical appetizers. It is also used to fill lasagna and cannelloni. Excellent for gratin vegetables and grated on pasta and risottos.
It pairs well with red wines such as Valpolicella and Valpolicella Superiore. Also great with delicate and spicy Bardolino as well as with structured and slightly soft white wines.
Great also with Durello Metodo Classico for a very typical pairing.
