This Monte Veronese dop can be defined as “old”. Made from raw cow's milk and aged for 12-18 months. The rind is thin and elastic, and the paste has a color that ranges from pearl white to straw yellow, especially in the summer period. It has a medium eye structure.

It has a fragrance of wildflower honey, especially in the summer, and fresh butter. Intense and savory on the palate, it has a nice taste persistence with a pleasantly almond-like finish.

The cheese is very suitable for grating and for first courses such as Bolognese lasagna or vegetable pasta.

Excellent on vegetable soups and legume creams. It pairs well with structured and refined white wines, with medium-structured red wines, and one in particular, regional, with Valpolicella Ripasso. We recommend it at the end of the meal with a delicate acacia honey.
