This cheese is also part of the ancient dairy tradition of the Alpine foothills, particularly in the Friuli Venezia Giulia region. Made from cow's milk, it comes from a semi-cooked paste, and the mezzano version undergoes a maturation period of 4 – 9 months. It has a straw yellow color and a slightly compact paste. Sweet and savory with a nice sensation of fresh milk.
