Taleggio Dop 1/4 of shape

The Taleggio DOP is produced in the Val Taleggio, in the province of Bergamo. Born as a stracchino, it has been valued especially since the early '900 to differentiate it from this typical Lombard cheese. Taleggio is a raw milk cheese made from cow's milk inoculated with microbial species that release its strongly identifiable flavor. It ages for a minimum period of 35 days.

Taleggio Dop 1/4 of shape: use in the kitchen

The Taleggio DOP (which we present here as a quarter of a wheel weighing about half a kilogram) is a table cheese that shines when paired with polenta, specifically the coarser, thick, and whole-grain type. Excellent for mountain-style polenta and for flavoring meat rolls or typical dumplings like the Bergamasque capunsei. It pairs well with dry, slightly aromatic white wines such as Sauvignon Blanc and Pinot Grigio. It is also great with medium-structured red wine.


Taleggio DOP: organoleptic characteristics

Crust: Thin and pinkish.
Paste: raw, white with a tendency towards straw yellow and melting beneath the crust.
Structure: soft and slightly elastic paste.
Flavor: sweet, with a very slight acidic note, slightly aromatic, sometimes with a truffle aftertaste.

Tasting notes

Crosta: Sottile e rosata.
Pasta: cruda, di color bianco tendente al giallo paglierino e fondente sotto la crosta.
Struttura: pasta morbida e lievemente elastica.
Sapore: dolce, con lievissima vena acidula, leggermente aromatico, alle volte con retrogusto tartufato.
