Among the most renowned varieties of Italian rice worldwide, a place of honor undoubtedly belongs to Black Rice. Terre del Bosco reintroduces it, respecting the tradition, the result of a purely artisanal working technique, according to the method used in the ancient rice mills of the Po Valley.
Whole Black Rice is one of the most precious rice varieties, born in Vercelli in 1997 and still produced today only in very few selected farms. A particular rice, whose coloring is due to the presence of polyphenolic molecules and anthocyanins, which have a remarkable antioxidant and antitumor power. Its aroma is also characteristic, reminiscent of freshly baked bread, very unique.
Its grain is round-shaped, making it very versatile in the kitchen. It contains a lot of starch and fiber with few fatty acids and proteins. However, it does have several B vitamins inside.

Black whole grain rice is very versatile in the kitchen, in fact it can be cooked in numerous ways: from the pan to the pot, from the pressure cooker to pilaf cooking. It has a greater resistance to cooking, almost no creaminess, chewiness, and elasticity when chewing.
All this makes black whole grain rice an excellent replacement for bread: it pairs wonderfully with meat, fish, and side dishes. It is also great for preparing cold rice dishes. The most famous dishes are: black whole grain rice with shrimp, with salmon, vegetarian with vegetables, or with pumpkin. Exceptional for fresh summer salads.
Cooking time: 30-35 minutes.
