Riso San Marco is the line of tradition, the result of a completely artisanal processing technique, according to the method used in the ancient rice mills of the Po Valley.
The Carnaroli Rice originates from Pavia, Novara, and Vercelli. It differs from the more common Arborio rice due to its higher starch content, firmer texture, and longer grain. It also holds cooking better because it has higher amounts of amylose. For this reason, it is a product that is preferred by chefs.
The Carnaroli Rice from the San Marco line (which we present on this page in a 500g package) is ideal for cooking traditional Mantuan risottos and meat-based dishes, as it remains particularly fluffy in style. It is also very good for cold rice dishes with vegetables because it retains its crunchiness and, most importantly, does not break.
