Let's clarify a bit. Kamut is an Egyptian word meaning wheat. However, Kamut is also the name of the American company founded in Montana by Bob Quinn, an organic farmer and doctor in plant pathology. The term Kamut should always be followed by the “R” for registered to indicate a protected trademark.
The generic term Khorasan refers to the cultivar registered on December 30, 2003 also in Montana by the USDA. Khorasan is the name of the Iranian region from where this grain originates and where the first seed arrived in 1921. Nutritionally, it is rich in zinc, magnesium, and selenium. The grain is 2-3 times larger than durum wheat grains and therefore contains higher amounts of proteins, vitamins, amino acids, and minerals. It contains gluten, albeit in minimal quantities, and may therefore be preferred by people who tolerate it with difficulty.
