It can be considered the preferred cereal of populations in cold climates. In Italy, it is particularly cultivated in the Dolomites of South Tyrol, and its use is exploited for numerous types of bread preparations. Rye is a very ancient cereal, also originating from the ancient Fertile Crescent of the Middle East, where it was initially considered a weed among more noble crops.
