Do you remember the fertile crescent? That vast area of the Middle East that has given birth to important products that are still contemporary and essential today. Well, about 8000 years ago, this ancient variety of large Spelt wheat was produced. Triticum spelta has a form very similar to that of soft wheat and contains a significant amount of gluten and especially fiber. Spelt, in general, is naturally resistant to weather conditions and pests. This results in the complete absence of synthetic pest control treatments and fertilizers. It is rich in proteins (14%) and vitamins A, B, C, E, minerals, potassium, calcium, phosphorus, magnesium, iron, manganese, and fibers that aid intestinal peristalsis and thus facilitate the digestibility of the product. To enjoy pasta as per the good Italian tradition, it is artisanally produced, bronze-extruded slowly, reaching a maximum temperature of 36 degrees, and dried on wooden frames for as long as 36 hours.
