The asparagus is a vegetable that preferably grows in sandy soils of small composition that allow it to break the surface and rise towards the light, above ground. They are typical of the lands along the Adige, so much so that a bit more is produced farther up from Arcè towards Affi, or in the first Veronese plains, particularly in Mambrotta and then in Zevio, Arcole, etc... Wild green asparagus still grows abundantly along the banks of the Adige where they mix with ancient edible herbs such as Dragoncello, Dandelion, and Fennel. The Fontana family produces it in small quantities and of green quality without the covering technique to make them white. Those produced on the farm are particularly sweet and tender with a nice intensity of aromas and flavors. This is a vegetable rich in fibers and an excellent antioxidant.

We recommend the asparagus cream with short pasta and a drizzle of freshly pressed extra virgin olive oil, still green and particularly bitter. Otherwise, it is ideal for a traditional Venetian risotto accompanied by excellent Monte Veronese DOP cheese in flakes. It is also great for stuffing asparagus and taleggio ravioli with a bit of freshly ground black pepper.
