This is an extra virgin oil that has a medium fruity flavor and a nice sensation of fresh olive, apple, and fresh tomato leaves. It has a nice sapidity and astringent and slightly spicy finish with a good overall balance. Excellent for dressing simple dishes that are not too spicy. Great on stewed lake fish, on unsalted fresh bread, and with seasonal vegetable salads.
