Cherry tomatoes are called so precisely because of their shape. They are not very large, and their small size facilitates the concentration of flavor and aroma. They have a skin that is not very thick and few seeds. They have a higher sugar concentration compared to all other tomatoes, with values that can reach around 12 degrees brix. This type of tomato is particularly balanced when grown in hilly areas like in our case. They also remain more turgid for longer, thanks to a slightly higher acidity level.
They are the ideal tomatoes for those who love bruschetta. In Puglia, they use frise soaked in water or the legendary acqua sala, a mixture of water, salt, basil, and extra virgin olive oil, where the frise or friselline are soaked. They are cut into pieces and marinated with fruity extra virgin olive oil and then with basil or wild mint or wild fennel. Then they are placed on a nice bruschetta, perhaps a bit toasted and rubbed with a clove of garlic, as is typical in southern Italy. A summer delight that, however, has no seasons! These cherry tomatoes are excellent for dressing particularly porous pasta varieties like Gragnano or made with ancient grains or Senatore Cappelli. They are also great for preparing sweet preserves of cherry tomatoes and basil. On pizza or on Ligurian flatbreads, they are fantastic!
