The high valley of Illasi borders the area of the Lessini mountain plateau. A territory that rises from 900 to 2000 meters at the highest peaks. A territory where high-quality potatoes have always been cultivated. In the high valley of Illasi, the soils are very draining due to the fact that they are located on a millennia-old riverbed which, in addition to pebbles and stones, features gravels and sands that have mixed over the years. It is an ideal territory for potatoes that require highly breathable soils. The most typical potatoes here are those with white flesh and red skins. They have always been used to prepare gnocchi, or for puree or baked with meat. The "petate," as they are called here, have always remained the most consumed food by mountain populations since the arrival of the Cimbri people from Saxony in the 1200s - 1300s.
The red potato from Lessinia is typical of these Veronese lands and is also cultivated in the high Illasi Valley, which connects to the Veronese plateau. It is a potato with a very firm flesh and has a good typical aroma. Here, it is used for the production of gnocchi precisely because of its minimal water content, which ensures particularly solid doughs. Additionally, it is used to make purees particularly creamy and fragrant with the addition of small amounts of mountain milk and mountain butter, as tradition dictates. Great for making gateaux and for simple salads with a bit of chopped chives and parsley.
