In Tuscany, tomatoes are particularly sweet and normally the sauces are particularly rich and flavorful. Besides tomatoes, celery, carrots, and onions are used. These sauces are also commonly used in Tuscany on crostoni, which, as you know, are made with unsalted bread and are therefore usually toasted and rubbed with garlic and local extra virgin olive oil. For this reason, the sauces are always particularly flavorful.
The tomato sauce is prepared according to the tradition of the people of Siena with San Marzano tomatoes grown on the Crete Senesi facing the sea. In addition to tomatoes, it contains Tuscan extra virgin olive oil, carrots, onion, celery, salt, and pepper. The presence of celery is noted as an allergen. It has an intense flavor and is ideal for toasted crostini and crostoni. Perfect for porous and bronze-drawn pasta such as Gragnano or Senatore Cappelli. Excellent also with Felicetti rehydrated cold. We recommend heating it in a terracotta pot with a bit of bay leaf in pure Tuscan style. A delight to try with white wines, even aromatic ones like Sauvignon Blanc or Muller Thurgau. An excellent pasta sauce to pair with Luminoso from Podere San Cristoforo.
