It is no coincidence that most of this product comes from Puglia. It is precisely there, in the early '900s, that the geneticist Nazareno Strampelli obtained a durum wheat cultivar at the Research Center for Cereal Cultivation in Foggia. The name was assigned in 1915 to the Abruzzese Senator Raffaele Cappelli, who had particularly worked to initiate the great agrarian reform of the Kingdom of Italy and especially in the Apulian region.
It is a rustic wheat but has excellent compositional and nutritional quality, especially protein, and for this reason, it is used in the production of high-quality leavened pasta.
Origin: whole grains from Puglia and Basilicata, then stone-ground at Molino Rosso.
