The Gorgonzola piccante di Palzola is one of the most significant products of the company and among the most sought after by connoisseurs and lovers of the cheese world.

The shape is aged for 70 days and during this period, the blue mold gently expands across the entire surface of the compact paste.

More pronounced towards the center with a fairly dark green color that is typical.

It remains very creamy, in the pure style of the Paltrinieri family.

The spicy Palzola is a must in the landscape of Italian blue cheeses and features a compact paste with a particularly dark and well-distributed veining throughout. It has an appealing spiciness but maintains a unique and elegant creaminess with an initial sweetness that ends with an intriguing almond-like sensation of dried fruit. Excellent for melting over a nice hot and soft yellow polenta in pure Northern Italian style, for filling Gorgonzola and walnut ravioli, and pairing with dried fruits and dried figs for delicious appetizers. Additionally, it's ideal with a drop of wildflower honey. To enjoy it with wine, soft and generally sweet wines are recommended, such as passito made from white grapes and Recioto di Soave DOCG.
