The Summer Wind has a name that is quite a statement... in fact, it is a cheese that speaks of the sun and the wind but also of the freshness of flower-filled pre-Dolomitic meadows and the hands of farmers who cut the fallow fields by hand to produce fragrant and aromatic hay.
This cheese is produced only during the summer months in the Dolomitic pastures and is then aged in fragrant and flowering spring hay.
During this time, the cheese acquires creaminess but especially very intriguing hay notes.

The Summer Wind is a cheese with a beautiful texture and compactness but also a certain softness due to the aging in fresh spring hay rich in flowers and aromatic herbs from alpine meadows.
The aromas of hay can indeed be perceived very clearly and enhance the pleasantness of the milky and buttery scents of the cheese. Excellent for a quality platter, to pair with noble Italian cold cuts and pear jams or delicate mustards made with apples.
Additionally, it pairs very well with acacia or chestnut honey and with full-bodied white wines that have good aromaticity such as Muller Thurgau and Gewurtztraminer.
