Ham fiocco aged 8 months

The Fiocco is the smallest and most muscular section of the back of the pig thigh derived from the same portion of the more famous Culatello. The processing is very simple and is almost identical to that of Culatello: after the cutting of the thigh, a trimming is performed with a large knife to remove excess meat and fat, thus giving it the typical elongated and rounded shape.

The Fiocco is recognized as a Traditional Agro-food Product typical of Emilia Romagna, and its production area is located in Western Emilia, specifically in the Bassa Parmense and in some areas of the province of Piacenza.

The Fiocco is an underrated cured meat, yet it is so good! Generally, people always think of Fiocco as the "scrap" of prosciutto or the younger sibling of Culatello. However, do not be fooled by the triviality of some rumors found online, which are often the result of deep misinformation about Italian food.

Fiocco in general, but especially at Del Sante, has an important value and comes from DOP Hams from heavy national pigs; a product towards which a respect and a particular care in processing are maintained.
 

Difference between fiocco and culatello

The main differences between Fiocco and Culatello are found in the aging: Fiocco, being a leaner cured meat, requires a shorter aging period of at least 7 or 8 months (Culatello requires at least 10). It is precisely its short aging that gives it the characteristic sweet and elegantly savory flavor.

However, it is important to say that both cured meats are bone-free, unlike Prosciutto di Parma, where the thigh is not boned.

The Sweet Fiocco aged 8 months is an ideal product to enrich valuable platters on the occasion of appetizers, perhaps pairing it with fresh wines or sparkling wines such as, for example, a Prosecco DOCG or Classic Methods with 20 months of aging.

It is also excellent for children due to its pleasantness and delicate flavor; interesting is also the pairing with acacia honey or wildflowers, elements with a delicate taste that allow you to fully savor the aromatic quality of this truly unique cured meat. This is the whole shape packaged vacuum sealed that has a weight of approximately 2.5 kg.
 

Sweet Fiocco: characteristics

The color is reddish pink and recalls the colors of traditional cured meats. This is also due to the fact that Del Sante's Sweet Fiocco does not contain any type of preservative, additive, nitrate, or nitrite. To best preserve it, the recommendation is to wrap it in a moistened linen cloth and store it in the lower part of the refrigerator.
