The grapes come from the vineyards of the Abbazia estate, still in the Municipality of Nervesa della Battaglia (TV), on the hills of Montello.
The harvested grapes are dried in fruit dryers for a period of 4-5 months. Subsequently, a white winemaking process is carried out with a slight maceration on the skins, followed by aging in barriques for 12 - 18 months.
The alcohol content of the wine is 13% Vol.
The Passito from the Giusti family is a sweet contribution to the lands of origin, choosing a very intriguing blend between Glera, the grape variety of choice for Prosecco, and Manzoni Bianco, a hybrid commonly used in Veneto that provides structure and fragrance to the wines, and in its passito version always maintains a very pleasant fruity freshness.
A sweet wine that remains endowed with a beautiful freshness and excellent drinkability and smoothness on the palate. Its pleasant fruity notes range from dried apricot to peach jam, acacia honey, and a slight spiciness of ginger. Nuances of vanilla and white chocolate. On the palate, it is consistent and soft with a nice acidity and a finish of toasted dried fruit, almonds, and cashews.
Excellent to pair with dry pastries in general. For those who love local traditions, try it with the famous Venetian Zaleti. It is also worth trying with very aged and blue cheeses, whether from cow's or goat's milk. Interesting with Blu del Moncenisio.
