The properties of the Stoppato family stretch across the plains of Veneto and Lombardy between Mantova and Verona. These are territories where there is an abundance of surface water and, above all, a high temperature with much humidity during the ideal ripening period in September. In addition to Vialone Nano, Carnaroli, the king of Italian rice, is also produced. Here, too, Stoppato conducts a selection for all the packaged product, requiring the same shape of the grain, thus ensuring greater uniformity in the cooking and finishing of the final product.
Dry rice is an ideal product in a gluten-free diet and especially in vegan preparations.
Carnaroli rice is a product that is preferred by chefs due to its great stability and cooking hold. Ideal for cooking meat-based risottos as it remains particularly grainy in the style and Mantuan tradition. Its lower quantity of starch makes it difficult to achieve creamy and runny rice. Ideal for meat risottos and cold rice dishes based on vegetables as it retains its crunchiness and above all, does not break.
