Rosemary is a perennial shrub that loves sun, heat, and air (but not cold air), therefore it is a plant that must be grown outdoors, on a balcony, but also on a windowsill in a somewhat sheltered area. It prefers dry, permeable soil, so it should be watered sparingly and with care not to soak the soil. Transplantable from January to the end of October.

Thanks to its tonic properties and as a stimulator for circulation, it is used for the preparation of detergents, creams, toothpaste, mouthwashes, and for rinses of the scalp. Rosemary has digestive properties, stimulates diuresis and sweating, regulates the menstrual cycle, and soothes spasmodic coughs. For external use, it is effective against rheumatic and arthritic pain. Rosemary has antimoth properties and for this reason, laundry is often left to dry in the sun right on this herb.

Rosemary in cooking has countless applications, best if used fresh as drying loses much of its active principles. It is an irreplaceable herb for meats, fish, and sauces.

It pairs well with breads, pizzas, focaccias, cheeses, soups, fruit salads and some desserts. Additionally, it is used to flavor oils and vinegars.

A recipe we recommend is fusilli with pine nuts and rosemary.
