The Castel Formaggio Medievale is a raw milk cheese from the Treviso dairy Perenzin: with a compact and white paste, an orange wrinkled rind, and an intense aroma reminiscent of milk.
The production of this cheese includes a particular, careful, and constantly monitored maturation at room temperature that triggers fermentation processes capable of altering the texture of the paste and enhancing certain smells and flavors.
The Castel Formaggio Medievale is the result of research by master cheesemaker Carlo Piccoli, whose intention was to interpret a cheese using milk from the Treviso and Belluno foothills in the style of the Middle Ages.
The Medieval Cheese Castle (in a 500-gram portion) is exceptional when paired with black bread and chestnut honey, but it is also a great ingredient for important dishes, from risottos to onion soups to stuffed red meats. A wine to combine with it is undoubtedly a passito capable of sustaining its intensity.
A cheese capable of providing a great wealth of sensations. Crinkled straw-colored rind with extensions of white molds, which with aging becomes more and more orange. Immediate and intense aroma of lactose with notes of underbrush. White, compact but crumbly paste. On the palate, it takes on intense flavors of fermented milk and notes of mushroom. Sometimes, slight blue veins may appear.
